How to prepare a stronger application
Stripe works mostly in Ruby, Java, JavaScript, Go and Scala, and the posting says new languages can be learned when the fundamentals are there. Rather than claiming those languages, show one project where you learned an unfamiliar codebase or tool quickly and explain how you got oriented.
The posting stresses giving and receiving feedback through code reviews and design discussions. A link to a pull request where you responded to review comments, or a short account of one, says more here than a list of technologies.
